They have two large maguey fields where they produce pulque, a traditional beverage. Pulque is an ancient drink extracted from the maguey cactus. It is first harvested as a sweet honey-like juice called “aguamiel,’ that is then mixed with the older fermented juice kept in clay pot which makes the pulque. This is about 5% alcoholic and filled with nutrients. The plants take about ten years to mature, and the plants will produce juice for about three months. The heart of the cactus fills with liquid and is scraped three times a day for its juices. It is considered the beverage of the gods.
